Pasta and Meatballs

  • 2 lbs. ground beef
  • 2 lbs. sweet Italian sausage (casings removed)
  • ½ onion diced and sauteed
  • 1 c. bread crumbs
  • 4 eggs
  • 1 c. grated parmesan cheese
  • 4 Tbs. chopped parsley


(Like Claudio's grandmother made in Naples- Italy, not Florida) Serves 6 Americans or 4 Italians

Combine the meats in a mixing bowl with onion, crumbs, eggs, parmesan & parsley. Mix thoroughly. If you wish you can add a few hot pepper flakes. Form into small meatballs and pan fry in vegetable oil until brown and crispy. Remove from pan and place on a pan lined with paper towels. (While doing this procedure, never turn your back to the meatballs because they will be eaten by friends and family.)

Put the cooked meatballs in a pot of your favorite sauce and serve over pasta.
