Luva Salad

  • 6 cups washed mesclun greens
  • ½ cup crumbled stilton or other blue cheese
  • ½ cup candied hazelnuts
  • 1 cup or 12 picked grapes per salad
  • ½ cup grape juice (strong)
  • ¼ cup 10% salad oil
  • ¼ cup fine ruby port wine
  • 1 shallot, chopped
  • sugar, salt and pepper to taste


Combine geens, blue cheese, hazelnuts, grapes in large mixing bowl.Candy hazelnuts by rolling them in melted butter and sugar and slow roasting them.Combine grape juice, port wine, and shallots in mixing bowl. Slowly add salad oil while whisking.Adjust seasoning, and toss with salad ingredients, then serve.

Makes 4 servings.
