Garlic Mashed Potatoes

  • 6 large Idaho potatoes
  • 4 cloves of roasted garlic
  • 2 Tbsp unsalted butter
  • ¼ cup heavy cream
  • Salt and pepper to taste
  • Pinch freshly chopped parsley


Cut potatoes into small diced sized pieces. Boil in hot water until tender, about 30 minutes. Drain water and keep potatoes in pot. Return to medium heat until all water has evaporated. Add butter, heavy cream, and garlic and whip with electric mixer until smooth. Add salt and pepper to taste and top with parsley.
