Cumin Scented Basmati Rice

  • 2 cups Long grain white basmati rice
  • 1 tsp Cumin
  • 2 Bay leaves
  • 2 tsp Cardamom
  • 2 tsp Cloves
  • 1 stick Cinnamon
  • 1 Tbsp Butter
  • ½ cup Thin sliced onions
  • ½ tsp Salt
  • ½ tsp Black pepper (coarsely ground)
  • 2/3 cups Water


Wash rice and keep it aside. In a heavy bottom wide pot, warm butter and add bay leaves, cumin, cardamom, cloves, cinnamon and black pepper and let it crackle for a minute. Raise the heat to high and add thin sliced onions and sauté it until medium brown. Add washed rice, mix it well and add water & salt and give it one quick boil, cover the pot tightly and the heat to the lowest and simmer it for about 10 minutes or until the water is fully absorbed. Transfer the pot to the cold burner to prevent it from sticking.
