Goat Cheese Cake in a Chocolate Graham Crust w/ Port Cherry Sauce

Ingredients:

  • 21oz Goat cheese
  • 24oz Cream cheese
  • 1½ cups Sugar
  • 1¼ cup heavy cream
  • 12 eggs
  • 1 cup dried cherries
  • ¾ cup cherry juice
  • ¼ cup ruby port
  • 1 tsp. Slurry (flour/water mix)

Method:

Preheat oven 250. Beat the goat cheese, cream cheese, and sugar. Stir in cream Scrape down sides and stir a little more. In a bowl beat the eggs, and add the eggs into the cheese mixture and mix scraping down the sides, halfway through. Pour into spring form pan. Bake 2 hours in water bath. Chill several hours. Mix other ingredients over low heat for cherry sauce.
