Rack of Lamb

Ingredients:

  • 4 14oz. lamb racks
  • 1 mango
  • 1 tsp yellow curry paste or medium hot dry curry powder
  • sugar to taste

Method:

Preheat oven to 350 degreesCut between each rib halfway through, toothpick the ends to make a circle. Lightly salt, and stand the racks up in a baking pan and cook for approximately 20 minutes.

Mango Sauce: Blend the mango and curry until smooth. Add sugar to taste and water or fruit juice if sauce is too thick.
