- 5 Tbsp paprika
- 1 Tbsp onion powder
- 1 Tbsp garlic powder
- 1 Tbsp black pepper
- 1 Tbsp dark chili powder
- 5 Tbsp kosher salt
- 1 Tbsp thyme
- ½ tsp cayenne pepper
- 2 ½ Tbsp oregano
Toss ingredients together before finely mixing in a food processor. Serves 10.

Route 7 has used two “rubs” in today’s recipes. The first rub, for the Duck and Pulled Pork, is more focused on spice, and the slow cooking time brings these pungent flavors into the core of the dish. Grill 7’s BBQ sauce then adds a blast of tangy flavor. The wine match for these dishes has to be up to the task, and a modern, lush Pinot Noir with some oak aging will serve us well. Cambria’s Julia’s Vineyard Pinot Noir is a velvety textured Pinot Noir that has terrific cherry and ripe raspberry flavors, along with some oak and excellent balance. It beautifully offsets the smokiness of the Duck and Pulled Pork and is a terrific addition to the picnic table!
